Ingredients:

  • Noodles:

    • 8 oz (about 225 grams) dried Chinese noodles (such as lo mein noodles or thin spaghetti) or fresh noodles
    • Water for boiling
  • Stir-Fry Vegetables:

    • 1 small onion, sliced thin
    • 1/2 cup sliced bell peppers (red, yellow, or green)
    • 1/2 cup sliced carrots
    • 1/4 cup sliced celery
    • 1 cup broccoli florets, lightly steamed or blanched
    • 2 cloves garlic, minced
    • 1 tsp ginger, minced
  • Sauce:

    • 1/4 cup soy sauce
    • 1 tbsp oyster sauce
    • 1 tbsp hoisin sauce
    • 1 tbsp brown sugar or honey
    • 1/4 cup chicken or vegetable broth
    • 1 tbsp cornstarch mixed with 1 tbsp water
    • Salt and pepper, to taste
  • Other:

    • 2 tbsp vegetable oil, for stir-frying
    • 2 green onions, chopped (for garnish)
    • Sesame seeds, toasted (optional, for garnish)

Instructions:

  1. Prepare the Noodles:

    • Cook the noodles in boiling water according to package instructions until al dente.
    • Drain the noodles and rinse with cold water to stop the cooking process.
    • Set aside.
  2. Prepare the Vegetables:

    • Slice the onion, bell peppers, carrots, and celery into thin strips.
    • Steam or blanch the broccoli florets until tender but still crispy.
    • Set aside.
  3. Make the Sauce:

    • In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, brown sugar (or honey), chicken or vegetable broth, cornstarch mixture, and salt and pepper to taste.
    • Set aside.
  4. Stir-Fry the Vegetables and Noodles:

    • Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat.
    • Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
    • Add the sliced onions, bell peppers, carrots, and celery. Stir-fry for about 2-3 minutes until vegetables are tender but still crisp.
    • Push the vegetables to the side of the wok and add the remaining 1 tbsp of vegetable oil.
    • Add the cooked noodles to the wok and stir-fry for about 2 minutes, tossing to combine with the vegetables and heat through.
  5. Add the Sauce:

    • Pour the prepared sauce over the noodles and vegetables. Stir-fry for another 1-2 minutes, tossing constantly, until the sauce has thickened and the noodles are well-coated.
  6. Serve:

    • Transfer the stir-fried noodles to a serving dish.
    • Garnish with chopped green onions and toasted sesame seeds (if using).
    • Serve immediately.
